No documents on his presence are available until the s. XV, when on July 2, 1487, Enrique de Guzmán, in a letter to the Dukes of Medina Sidonia, considered the Alfajor de Medina as an unquestionable delicacy.

Since ancient times the Alfajor de Medina has been kept in the Medina Sidonia workshops, passing from father to son.

With the same unalterable recipe for centuries, it is made from pure honey, almonds, hazelnuts and different spices.

This perfectly balanced combination of its ingredients gives it a characteristic flavor and a crunchy and at the same time ductile texture.

Currently the Alfajor de Medina is one of the few sweets in Spain that has a PGI designation.
